Rolo Cookies



INGREDIENTS:


1 c. sugar

1 c. brown sugar

1 c. margarine

2 eggs

2 tsp. vanilla

2 ½ c. flour

1 tsp. baking soda

¾ c. cocoa

bag of Rolo candies, unwrapped



INSTRUCTIONS:


1-Preheat oven to 375 degrees.


2- Unwrap Rolo candies and set aside.


3- In mixing bowl combine sugar, brown sugar and margarine. Beat together with electric mixer for 2 minutes or until well combined. Add eggs and vanilla and beat again thoroughly.


4- Add flour, baking soda and cocoa and mix until fully incorporated. 


5- Scoop out a ball of dough with spoon or cookie scoop.  Place a candy in the center of each scoop of dough, roll dough around the Rolo (being sure the entire candy is covered with dough)  


6- place on a lightly greased baking sheet.  Bake at 375 degrees for 7-10 minutes.  Be careful not to over bake.  


Recipe makes enough dough for exactly one bag of Rolos. 


NOTES: 

-These are best warm out of the oven when the chocolate and caramel is gooey.


-I like to make the dough ahead of time then shape and bake them when guest arrive. Serving them warm will get you celebrity status every time!


- Pop left over cookies in the microwave for 9 seconds to rewarm them.
